I think this is a weird historical one. OEDEMA is a generalised term for fluid retention within body cavities where it shouldn't be and under that definition it's a mass noun for sure, it's a condition. Trouble is that it used to be called DROPSY and DROPSY has a specifically-defined plural (DROPSIES, funnily enough) in the dictionary, so I reckon that's where that's coming from.

When you say it can be pluralised, do you mean it finds the entry if you search for the plural? I think Jono might have something to say about that. Having said that, DROPSIES is explicitly given (as Jim says), and also OEDEMAS is also valid on Apterous.
