I think this is a weird historical one. OEDEMA is a generalised term for fluid retention within body cavities where it shouldn't be and under that definition it's a mass noun for sure, it's a condition. When you say it can be pluralised, do you mean it finds the entry if you search for the plural? I think Jono might have something to say about that.
